Kitchari

Digestive Health

Nervous System Soother

Balancing

not-vegan (ghee)

Kitchari (kitch-a-ree) is considered one of the most nourishing and healing foods in Ayurveda. The humble yet powerful combination of rice and beans are staples globally – they represent survival itself. In kitchari, mung beans and basmati rice are slow cooked with loads of water to create a deeply hydrating, protein rich meal that is a brilliant conduit for the medicine of spices.

A warm bowl of kitchari with a glistening, golden pool of ghee and a brightening wedge of lemon is a symbol of glorious and abundant well-being. This ultimate kitchen workhorse can be a simple, affordable weeknight meal for the whole family, it can be used to cleanse and rebalance with a mono-cleanse, and it can be used like a classic chicken soup – to cure whatever is ailing you.

Sambar Powder

Throughout much of India, especially the southern states, households have their own unique sambar blend. Sambar has a bit more heat and complexity than other spice blends. It begins with roasting urad dal and toor dal. These pulses give a heartiness and richness to the spice blend. Additionally, the spices are roasted to add a depth of flavor that will bring character to any dish.

Rather than cooking with it, we recommend that you use it as a condiment tableside for grain dishes, curries, and whatever else you might like to bring some sophisticated heat to.

Ingredients: urad dal*, toor dal*, red chilies*, coriander seeds*, fenugreek seeds*, fresh curry leaves, cumin seeds*, black pepper*, asofoetida, turmeric powder*
